Hojicha is a Japanese green tea made by roasting the green tea leaves and stems over charcoal fire.
This preparation reduces the caffeine content of the tea and creates a rich and nutty flavor with hints of caramel and smoke. Our Hojicha is ground into a powder by a stone mill and can be used in any number of ways. Here's a couple of our favorite recipes below.


HOJICHA LATTE
2g hojicha powder
2oz hot water
6oz warmed milk of choice
honey or date sugar to taste
whisk or blend until creamy

HOJICHA ICE CREAM
5 egg yolks 
1/2 cup sugar
1tsp vanilla extract
1 tbsp hojicha powder
1 cup whole milk
1 cup heavy cream

In a small sauce pan whisk together whole milk, heavy cream, hojicha powder, and vanilla extract.
Heat over low heat until the milk is warm (5 minutes). Make sure the milk is warm then remove from heat.
Mix sugar and egg yolks in a small bowl. Add a spoonful of hojicha-milk mixture and whisk until well incorporated. This is called tempering (raising the temperature of the eggs so they don't cook when combined with the warm milk). 
After tempering the egg yolks, add them to the hojicha-milk mixture. Return mixture to the stove and heat until it reaches 170°F.  
Let the cream mixture cool for 30 minutes to room temperature. Then place in fridge to cool completely.
Pour the custard into your ice cream maker and churn for 15-20 minutes.
Pour the ice cream into a freezer safe container and freeze for 3-4 hours or overnight.
