A Valentine Menu
02.09.25
There are many ways to express love but one of our favorite ways is to cook for someone. You can infuse so much love and care into the food and drink you prepare. Here are some tea-infused drinks and a dessert that we'll be making for our valentine this year. Recipes courtesy of our loving friends, Leif Hedendal and Rosie Dooley.

Chai Dream, Ice Cream
1 1/2 c milk
1 1/2 c heavy cream
1 c (225g) sugar
1/2 scant t salt
1/2 c (100g) egg yolks
1) Measure milk, heavy cream, sugar and salt in a small saucepan and bring up to a near boil (200F). 2) Add tea and steep for 20-30 minutes. 3) Once your dairy has reached full flavor strain out the tea leaves and return dairy to pot. 4) Set up an ice bath in a large bowl and place a medium bowl on top of the ice with a strainer. 5) Whisk some of your infused warm dairy into the egg yolks. Add the yolk mixture back into the pot and turn on the heat while using a spatula to stir. 6) Stir constantly until your base thickens and reached 175F on a kitchen thermometer. 7) Once you have reached the desired temperature, turn off the heat and strain ice cream base through the strainer in your ice bath. Chill completely. 8) After 3-4 hours of curing your ice cream base in the refrigerator, spin to your ice cream machine's settings.
