Cloud Mountain comes from the Jiu Keng cultivar – a popular cultivar regarded as hearty, cold resistant, and richly flavored. Grown at high elevation, the variable weather and cloud cover provides beneficial shade to the tea and encourages development of sweet-tasting amino acids in the leaves. The extreme temperature difference between day and night also enhances complexity in the tea. Leaves are picked at dawn then withered, heated, rolled, and roasted. The result is a tea with a unique mineral astringency and a sweet, almost creamy character. 18-20 servings per 2oz package.
